Sugarfree Apple Cake

 

Ingredients

  • 2 large eggs

  • 3 large Golden Delicious apples, peeled and sliced thin

  • 1 lemon (zest + juice)

  • ¼ cup sunflower oil (50 g)

  • ⅔ cup Greek yogurt (150 g)

  • 1 tbsp honey

  • ¾ cup whole wheat flour or type 2 flour (90 g)

  • 2 tsp baking powder (8 g)

  • ½ cup raisins (80 g)

  • 1 tbsp chopped almonds (about 8 almonds)

Instructions

Prepare the base:
In a mixing bowl, beat the eggs with lemon zest, honey, and Greek yogurt until creamy and smooth.

Slice the apples:
Peel and slice the apples thinly. Toss with the lemon juice to prevent browning.

Finish the batter:
Add sunflower oil to the egg mixture. Then mix in sifted flour, baking powder, raisins, and apple slices. Stir until well combined.

Prepare to bake:
Pour the batter into a parchment-lined cake pan (8 or 9 inches). Sprinkle the top with chopped almonds for crunch.

Bake:
Bake at 356°F (180°C) for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.
